Ingredients

  • 1 cup brown rice
  • 1 tbs vegetable oil
  • 500 g chicken thighs trimmed thickly sliced 500 grams chicken thighs, trimmed, thickly sliced
  • 1 brown onion cut into thin wedges 1 brown onion cut into thin wedges
  • 1/2 pkt bean peas & broccoli 1 half pkt bean peas & broccoli
  • 175 g honey garlic & soy stir-fry sauce 175 grams honey garlic & soy stir-fry sauce

Instructions

  • Cook rice according to packet instructions.
  • Meanwhile, heat oil in a large frying pan or wok over medium-high heat. Add half the chicken. Stir-fry for 3 minutes or until browned. Transfer to a bowl. Cover to keep warm. Repeat with remaining chicken.
  • Add onion to pan. Stir-fry for 2 minutes or until softened. Add vegetables. Stir-fry for 3 minutes or until just tender. Add sauce and return chicken. Stir-fry for 3 minutes or until chicken is cooked through and vegetables are tender.
  • Divide rice among bowls. Top with stir-fry. Serve.
